I’m sure many of you find yourselves with a few super ripe bananas at the end of the week that are simply too mushy to eat alone. What do you do with these little gems? Bake something awesome, that’s what!
For me personally, I love the combination of banana & peanut butter or banana & chocolate, and since I recently made peanut butter banana protein blondies, I wanted to do a version with the chocolate component. Also, my husband is in the midst of a weight loss challenge and it’s important for him to hit specific calorie and macronutrient goals, put in place by a qualified Registered Dietician (RD), so we made sure to come up with something that we could both enjoy!
Two of the main ingredients, besides banana or chocolate, were some Kodiak Cakes Power Cakes Buttermilk Flapjack & Waffle Mix and my go-to protein of choice, De Novo Nutrition Max MPS Whey in White Cake. You can substitute any pancake/waffle mix and protein if you’d like, but note that the nutritional information will vary depending upon brands used. I prefer both of these products since the mix has extra protein and the protein powder has the highest Leucine content of any protein powder on the market, which is important since Leucine is the amino acid responsible for Muscle Protein Synthesis (MPS).
Double Chocolate Chip Banana Blondies
Yields: 12 servings
🔸300g banana, mashed
🔸138g Kodiak Cakes Power Cakes Buttermilk Flapjack & Waffle Mix
🔸1 whole egg
🔸138g egg whites
🔸100g Greek yogurt (I used 2% here)
🔸66g fat free cream cheese
🔸34g all-purpose baking flour
🔸liquid stevia or sucralose to taste (I use 30-40 drops)
🔸1 scoop (30g) De Novo Nutrition Max MPS Whey in White Cake
🔸84g white chocolate chips
🔸84g milk chocolate chips
🔸1 tsp baking soda
🔸1 tsp baking powder
🔸1/2 tsp salt
- Preheat oven to 375F.
- Mix all ingredients in a bowl except for chocolate chips until well blended.
- Evenly divide mix between 3 glass pie dishes (or baking pan(s) of choice) sprayed with cooking spray, then evenly divide & sprinkle chocolate chips on top.
- Bake for approximately 15-20 minutes or until toothpick comes out clean. Allow to cool, divide into 12 servings, and refrigerate up to 5-7 days or freeze for up to 3 months.
