When my husband came back from his weeklong initiation for the HEB SlimDown ShowDown Challenge in San Antonio, he came bearing a few “gifts” from some of the sponsors. One of them, Kodiak Cakes, supplied him with some of their macro-friendly goodies such as their Minute Muffins, Power Cakes Flapjack & Waffle Mix, and this new product I hadn’t seen before, Power Bake protein packed muffin mix in blueberry lemon. At first sight, I knew we had to come up with something incredible, and I knew just what that was: Blueberry Lemon Protein Muffin Loaves!
I sat on the idea for a week or two, and when I finally had time, got to work making my vision come to life. The result? A super delicious & moist muffin with just the right amount of blueberry & lemon flavor and plenty of protein to help reach our targets each day! Seriously though, these came out sooo amazing!
Blueberry Lemon Protein Muffins
Yields: 8 mini loaves/12 muffins
🔸115g banana, mashed
🔸198g Kodiak Cakes Power Bake Muffin Mix in Blueberry Lemon
🔸1 whole egg
🔸92g egg whites
🔸30g lemon juice
🔸4g lemon zest
🔸200g fresh blueberries
🔸60mL reduced fat high protein milk
🔸150g Greek yogurt (I used 2% here)
🔸liquid stevia or sucralose to taste (I use 30-40 drops)
🔸1 scoop (30g) De Novo Nutrition Max MPS Whey in White Cake
- Preheat oven to 375F.
- Add all dry ingredients in a bowl, then add blueberries and carefully stir in so that berries become coated; this step is important as it will prevent the blueberries from rupturing while baking. Add all other ingredients and stir until well blended.
- Evenly divide mix between an 8 well loaf pan (or 12 well cupcake/muffin pan).
- Bake for approximately 23-30 minutes or until toothpick comes out clean.
