Sometimes, I crave a cold deli-style salad, and one of the best ones around is seafood salad. With it’s creamy texture and rich flavor, what else could a girl want? How about better macros! Well, I have the answer to that with this super delicious and protein packed version. The flavor reminded me of a cross between a lobster roll and a po’boy, and goes excellent on a sandwich or even as a dip with pita chips.
Creamy Seafood Salad
🔸1 single serving package of imitation crab
🔸85g (3oz) of cooked & peeled cocktail shrimp
🔸130g non-fat Greek yogurt
🔸2 Laughing Cow creamy light Swiss cheese wedges
🔸25g cocktail sauce
🔸seasonings of choice to taste
- Chop shrimp and imitation crab meat into small pieces/cubes and place into a bowl.
- Add all other ingredients and stir until well blended.
- Enjoy as a dip, on a sandwich, or by itself!
