Some of you may have heard of something called #KatieAnneBrownies (if you haven’t, you’re missing out, and you need to Google that now!) and they are one of my favorite macro friendly treats to make. I especially love the base recipe because you can add subtract things to make them fit your macro profile at any given time. I’ve experimented with chocolate and non chocolate (blondie) varieties, but this is one of my favorite versions.
The original recipe (go check out @katieanne100‘s Instagram page or her blog for more details) doesn’t call for use of banana, but I find they make a nice flavor addition as well as add to the gooey consistency. I’m all about experimenting in the kitchen and this was definitely a winner IMO. I’d honestly recommend to use only 1 container of greek yogurt or maybe even using half of each flavor, but this particular batch still came out tasting amazing!
🔸15 oz can black beans (drained & rinsed)
🔸150 g FF cream cheese
🔸2 large eggs
🔸150 g egg whites
🔸60 mL SF maple syrup
🔸1 container (150 g) Dannon Oikos Triple Zero Chocolate Greek yogurt
🔸1 container (150 g) Dannon Oikos Triple Zero Banana Creme Greek yogurt
🔸14 g honey
🔸272 g ripe banana (3 small – medium bananas)
🔸liquid stevia or sucralose to taste (I use 30-40 drops)
🔸1 scoop (30 g) De Novo Nutrition Max MPS Whey in White Cake
🔸28 g coconut flour
🔸40 g oat flour (or regular flour)
🔸30 g cocoa powder (regular or dark chocolate)
🔸14 g (2 pieces) unsweetened baking chocolate, melted & cooled
🔸42 g mini semi-sweet chocolate chips
🔸1 tsp each salt, baking powder/soda
- Preheat oven to 350F
- Mix all wet ingredients in food processor, then add dry. Add chocolate chips and baking powder/soda at the end.
- Divide evenly into glass pie dishes that are sprayed with non-stick spray; you may use non-stick pans if you have them, but I prefer glass pie dishes for mine.
- Bake for 25-30 minutes (times are for 3 glass pie dishes, adjust accordingly depending on type/number of dishes used) or until desired doneness is reached. If you like them a bit more gooey, take out after 23-25 minutes and check.
- Let cool and enjoy. Refrigerate leftovers or freeze for later to break into brownie bites!
Recipe yields: 12 servings (this can easily be divided into more or less portions, but nutrition will change)
